It's overcast and gray outside, but inside there are plenty of colours to brighten up my day.

Shucks, thanks Wendy! All in a days work. Well, plus a year of waiting for the wine, 6 weeks for the tincture, 4 weeks for the sauerkraut.... A little bit of work, lots of waiting and abundant rewards! Yay!

You are inspiring me, Amber!

I'd like to try the dandelion wine. Where did you find the jugs? Also, I find a difference (visually) in the first crop of dandelions and the second. Does this make a difference for the wine?

Hi Pamela! The gallon jugs originally had organic apple cider vinegar in them. They used to sell them at the Organic Market, but the folks who carried them are no longer there, so I'm not sure where to get more. :( Well, I found olive in glass gallon jugs at Cedar's and Co, so I guess I do have another source, but I really loved that ACV. It was nearly local, and so afforadable.

As for the dandys, I harvestd the first crop of flowers over a period of a couple of weeks, freezing my harvest each time until I had enough. I haven't harvested any of the late season flowers, so I'm not sure if it would make a difference in the wine.

I'm exctied to make another batch this year and would like to try some other 'country wines' too. Maybe if I get something palatable enough I'll have a tasting!

What do you do with the willow tincture? Can you use any willow?

Hey Anon,

I had a nice response crafted to answer your question yesterday and then the internet ate it! I'm off to Seedy Saturday this morning, but I will respond to you when I have a few free moments this weekend.

Cheers,
Amber
